The Alfa Moderno Portable (Antique Red) is the most compact oven in the Alfa Moderno line: a propane-fired, Italian-made pizza oven that bakes one 13 in pizza at a time on a 16 x 16 in firebrick floor. At 77 lb it can move between a patio table, a cart and a weekend house, and it uses the same Heat Genius approach as the larger Alfa ovens, with heat stored in the floor and reflected off the curved vault.

Installation Notes

The Moderno Portable is for outdoor use. Alfa calls for at least 20 cm (8 in) from walls or other equipment, 50 cm around the flue and 1 m (40 in) above the top, with no flammable material within a 1 m (40 in) radius, on a flat, stable surface out of strong wind. The outer shell can exceed 80 C (176 F). Check the floor with an infrared thermometer: Alfa targets 370 to 430 C (700 to 800 F) for pizza.

Rules on propane cylinders, wood smoke, terraces and rooftops vary by building and town, including in New York City, so confirm what your building allows before you set up.

Alfa rates the maximum oven temperature at 500 C (932 F) and recommends a floor temperature of 370 to 430 C (700 to 800 F) for pizza.

What fuel does it use?

Propane (LPG, G30 / G31) from a cylinder, connected with the supplied regulator hose.

Is the cover included?

Only with the With Cover option, which adds the Alfa cover that doubles as a carrying bag.

Warranty

Alfa covers its ovens for 24 months against conformity defects, and customers in the United States and Canada get an additional year on the gas burner. Keep your receipt and the serial number from the label on the back of the oven; claims go through the dealer. Exclusions in the Alfa manual include transport damage, improper use or installation, damage from exceeding 500 C, oxidation from salt air, the door and glass, and the refractory stone and under-floor insulation (a replacement stone is supplied).
